Chilled Soups: The Ultimate Refresher!
Chilled soups give us the nutrition, flavor and variety that hot soups do, but they are refreshing rather than warming. On a hot summer day it is wonderful to cool down with something a little more substantive than a glass of ice tea, but not as heavy as a hot meal can feel.
Chilled soups can be just as flavorful as hot ones, but because they are cold they can deliver a bit more acidity (usually in the form of lemon, lime or tomato) without overwhelming the palate. You get the "perking up" effect from the acid without getting the puckered lips and "sour face". (This is the reason white wine is served chilled, as well).
