This Turkey Soup Recipe Is the Perfect Way to Use Leftover Turkey
It happens ever year, usually two or three times: leftover turkey. This turkey soup recipe is the absolutely best way that I have ever found to use it up. The nice thing about this recipe is that it really doesn't matter what part of the turkey you
have left over. White meat, dark meat, both...it's all great!
If you make this soup just once after a roast turkey dinner, I promise you it will be requested every time afterwards!
Ingredients
1 medium onion, chopped finely
1 celery stalk, chopped finely
1 green pepper, chopped finely
2 to 3 cups shredded or cubed cooked turkey
Splash of olive oil
Salt and pepper to taste
3 tablespoons butter
3 tablespoons flour
4 cups milk at room temperature
4 cups chicken stock or broth
Pinch of nutmeg
2 cups of either heavy (whipping) cream or half and half
Dried parsley, sage, rosemary and thyme to taste
White Sauce Preparation
1. In a small sauce pan, melt the butter on low heat.
2. Add the flour a bit at a time to the melted butter. Stir thoroughly each time to remove lumps
3. When the flour is all added, cook the mixture (called a roux) for a couple of minutes more.
4. Remove the sauce pan from the heat.
5. Add the milk, in small amounts. Stir thoroughly each time to remove lumps.
6. Continue to add milk until the mixture becomes liquid again.
7. Add the remaining milk and stir completely. Return sauce to heat, and add salt, pepper and nutmeg to taste.
8. Cook the sauce until it is warmed through. Keep on simmer while you complete rest of the turkey soup recipe.
Soup Preparation
1. Heat olive oil in soup pot on medium low.
2. Add onions, celery, green peppers and salt. Sautee until onions are soft.
3. Add turkey and remaining spices. Cook for a few minutes more.
4. Add chicken stock. Heat until broth is hot, not boiling.
5. Add some of the broth to the white sauce, and stir thoroughly.
6. Pour the white sauce into the soup, and mix it in completely.
7. Continue cooking the soup, adding the cream to thicken it even further.
Notes
One of my favorite ways to add to this turkey soup recipe is to add a handful of frozen peas about 4 or 5 minutes before
serving. This adds a touch of sweetness, plus a wonderful texture contrast to the soup.
