Vegetarian Soup Recipes

Vegetarian soups are not "regular" soups with the meat taken out, or with meat substitutions. A good veggie soup recipe celebrates the massive number of ingredients available to us that do not come from meat or other animal sources. Many of these ingredients can add a lot of flavor to the broth; or else you can use tomato or other vegetable broths to add more flavor to your soup.



None of the recipes listed below have meat, dairy or egg ingredients. More than this, though, I have tried to pick recipes whose ingredients stand out well on their own. You can add meat to these recipes if you like, but it will not, in my opinion, make them better.
